Thermomix Asparagus Pesto

I prepared the Thermomix Asparagus Pesto last week and I froze the leftover in glass jars.

I used the pesto to season pasta that both my partner and I loved, I think it’s also perfect for those who don’t tolerate the taste of asparagus very well.

Another idea could be: add the Thermomix Asparagus Pesto to the béchamel sauce to make a more indulgent version of the vegetable lasagna.

If you don’t have pine nuts, you can easily substitute them with almonds or cashews as I did.

Ingredients

  • 20 asparagus
  • 1 liter water
  • 100 gr grated parmesan cheese (*)
  • 30 gr pine nuts (or almonds or cashews)
  • 1 tsp salt
  • 6 tbsp extra virgin olive oil
  • ice cubes (to taste)

Instructions

    Put the water in the bowl and place the basket with the cleaned asparagus cut into small pieces on top of the blades, close the jar and cook: 15 min. 100° speed 2.

    Drain the cooked asparagus and cool them in very cold water, preferably with ice (this procedure will help not to darken the asparagus).

    In the empty bowl, place the cooled asparagus, Parmesan, pine nuts and salt, blend: 10 sec. speed 7.

    Gather on the bottom with the help of the spatula and add the oil, emulsify: 20 sec. speed. 5.

    The thermomix asparagus pesto is ready to be used... Buon appetito!

Notes

Thermomix asparagus pesto can be kept in the refrigerator closed in a glass jar and covered with a layer of oil on the surface or frozen in glass jars.

It is perfect for seasoning pasta or filling lasagna.

*For vegans, it is necessary to replace Parmesan with dehydrated brewer's yeast, while for those intolerant to dairy products, it is possible to use lactose-free Parmesan cheese.
