There is a saying in Italy that says ‘Thursday = gnocchi’, but who said that gnocchi should only be prepared on Thursday? 😀

Preparing them is very simple and above all quick, they do not need to rest or even boil the potatoes.

Thermomix Ricotta gnocchi

Ingredients

  • 500 gr ricotta
  • 200 gr plain flour ( or 00 flour or all-purpose flour*)
  • 1 egg
  • 80 gr grated parmesan
  • salt (enough)

Instructions

    Put all the ingredients in the bowl, knead: 1 min. speed 3. (the mixture must be smooth and homogeneous), if necessary, add a little flour.

    Pour the mixture onto the work surface, divide it into several pieces and make long rolls with a diameter of 2 cm from each one.

    Cut them into small pieces and boil them in plenty of boiling, unsalted water and remove them with a perforated scoop as they rise to the surface (so they avoid sticking together).

    Season them to taste and serve them... Bon Appetit!

Notes

*if intolerant use the gluten-free flour.

It is also possible to freeze them on a floured tray, slightly spaced apart from each other and once frozen, transfer them to a plastic food bag and place them back in the freezer. They do not need defrosting, they cook immediately. 🙂
