Today’s cake contains a breath-taking, superlative union, o cherries and cocoa.

It’s an incredible goodness, so soft and beautiful, because let’s say it, the eye wants its part!

For a while, I had the idea of preparing a dessert with cherries, but not the classic clafoutis, which people don’t like very much here.

The inspiration came from Pinterest, sometimes I get almost enchanted admiring cakes, muffins and desserts of all kinds. Did it ever happen to you?

Ingredients

  • 50 gr butter ((soft)*)
  • 90 gr cane sugar
  • 1 egg
  • 120 gr plain wheat flour
  • 25 gr cocoa (powder)
  • 16 gr baking powder
  • 1 pinch salt
  • 1 pinch cinnamon
  • 1 tsp extract vanilla
  • 120 ml milk (*)
  • 200 gr cherry ((pitted))

Instructions

    Put the butter and sugar in the jug, whisk: 2 mins at speed 3.

    Remove the mixture from the walls with the help of a spatula and add the egg and salt, incorporate: 1 min. speed 4.

    Combine flour, cocoa and cinnamon, mix: 30 sec. speed 4.

    Remove the mixture from the walls with the help of a spatula and add milk, vanilla and baking powder, mix: 1 min. speed 4.

    Incorporate the washed and pitted cherries and mix with mixture using a spatula.

    Pour the mixture into a pan (I used a 22 cm one) covered with parchment paper and bake in preheated oven at 170°C for about 25-30 minutes, do the toothpick test.

    Allow to cool completely and serve with a sprinkle of powdered sugar... Buon appetito!

Notes

*For those who are intolerant to dairy products, it is possible to replace butter and milk with vegetable or lactose-free milk.
