Thermomix Margherita Cake

In the family this dessert is called the Rosina cake and takes its name from a historical friend of my grandmother who passed him the recipe. 🙂

It is truly an incredible simplicity and speed to do, in case you can also add jam inside the mixture and mix it or chocolate chips, sometimes I add orange marmalade (which I also promised to redo) .

Thermomix Margherita Cake

Ingredients

  • 2 eggs
  • 280 gr sugar
  • 350 gr plain wheat flour
  • 1 pinch salt
  • 2 tsp lemon (rind)
  • 16 gr baking powder
  • 200 ml milk
  • 100 ml sunflower oil

Instructions

    Preheat oven to 150° C fan forced and prepare a 24cm fluted ring pan.

    Put all ingredients without baking powder into mixing bowl and combine: 1 min. Speed 5.

    Add baking powder and combine: 20 sec. Speed 5.

  4. 4

    Pour mixture into prepared fluted ring pan and bake for 50-55 minutes (check as may need longer-skewer to come out clean).

    Serve with sifted icing sugar, if desired… Bon appetite!
